Buckeyes Peanut Butter Balls dipped in Chocolate
1 box powdered sugar 2 cups (18 oz. jar) peanut butter 1 stick margarine (melted) 3 cups rice crispy cereal
Mix cereal, margarine, p.b., and powdered sugar until well blended. Chill mixture for 1 hour. Shape into small balls.
Chocolate – 1 ½ pounds of chocolate coating (sometimes called almond bark) Melt chocolate in the microwave until smooth. Cook for 1 minute, stir, 30 seconds, stir, 30 seconds, stir … Continue until chocolate is smooth.
Dip p. b. balls in melted chocolate. Drop on waxed paper. Let cool. Buckeyes will harden quickly – about 5 minutes.
