Red lentil bake
Ingredients 200g red lentils 1 red pepper 100g reduced fat cheddar cheese 1 egg, beaten 2 x 15ml spoon low fat plain yogurt Small bunch parsley Back pepper
Equipment Saucepan Weighing scales Non-stick baking dish Knife Chopping board Grater Measuring spoons Bowl Spoon
Method 1. Boil the lentils until cooked, about 15 minutes.
2. Drain the lentils.
3. Deseed and finely chop the pepper. 4. Grate the cheese. 5. Chop the parsley. 6. Crack the egg into a bowl and beat. 7. Mix all the ingredients together.
8. Pour into a non-stick baking dish. 9. Bake for 40-45 minutes, until golden.
10. Serve. Top Tips Use a different type of cheese for interest, Stilton and walnut? Add flat-mushrooms, different herbs or vegetables.
