Vegetables Vegetables are edible parts of plants. They are good sources of indigestible carbohydrates such as vitamins, minerals and cellulose. Their structures consist of 70-95% water. Carbohydrate ratio varies from vegetable to vegetable. Rich in vitamins A and C, calcium and iron.Vegetables facilitate function and cleaning by discharging of the intestinesProtein ratios are low.Therefore the contribution of protein requirement is less Energy values of most of these nutrients are low. Raw or cooked,vegetables are enjoyably eaten. In Turkey, approximately 10,000 plant species are grown. Among these plant species, approximately 3,000 are endemic to Turkey. A few of endemic plants in Turkey :

Cress Cress,mostly used in salads,has a few endemic types and is a very useful plant consisting of minerals and some effective plant essences and vitamin c.

Asparagus Asparagus which is an important nutrient is known to be endemic in our 3 provinces. Asparagus is rich in vitamin A,K,B(folate)and C. Asparagus is used in soup as well as meat dishes.

Beet There are two kinds of beet which are endemic in our country. It gives an appetite,facilitates digestion. Sugar beet is used in sugar and sugar beet molasses production. Some dishes,salads and pickles are made with red beet.

Thyme Our country is very rich in terms of endemic species of thyme.Thyme is available as powdered,fat and tea. It strengthens the body.

Smartweed In the spring, frequently encountered in nature,benefits of smartweed are a lot. It is remedy for many diseases from diabetes to kidney stones. It can be consumed both raw and in dishes or teas.

Enugreek Benefits and Effects of fenugreek : Soften the breast, expectorant and stops coughing Gives strength and comfort to the body.It can be used as powder by drying the seeds or as flakes. In addition its oil is extracted.Fenugreek is a spice commonly used in meat dishes,soups and sauces.

Radish This plant is eaten raw fresh or cooked.It is very useful for liver. Radish roots and leaves are used mostly in salads.

Locust The most important feature of the locust is being highly effective for shortness of breath.It is consumed raw or molasses are made from it.

Hawthorn It strengtens heart and also protactive against hardening of the arteries. Eaten as a fruit and drunk as a juice.

Hackberry It stops sweating of feet,treats wounds,helps the loss of renal sands,relieves stomach pains,stops coughing.

Rosehip Mostly used as rosehip tea. From rosehips,jam,fruit juice,baby food and oil are obtained. Increases the body resistance. It gives strength to body and eyes.

Mallow Fresh plants are consumed as a vegetable.Hibiskus tea is made from dry leaves and flowers or for external use it turns in to mush. It softens breast and stops coughing. Antipyretic. It is good for colds and bronchitis

Sorrel Tea is made from sorrel reduces fever.Sorrel also stops gums receding and bleeding.
