Can you tell the difference between Dietary Restricted desserts and their regular versions? Presented by: Victoria Schickedanz & Emma Stoddard Bagels Left: Regular Bagels (Blue) Right: Gluten Free Bagels (Red) Banana Bread Left: Regular Banana Bread (Blue) Right: Vegan Banana Bread (Red) Our question for Capstone was whether or not people could tell the difference between dietary restricted desserts and their regular versions. The restrictions we chose were Gluten Free, Sugar Free, Vegan, and Dairy Free. We physically tested and noted the differences in look, texture, taste, food cost, and labor. We conducted a blind taste test in the Old St. Regis open to the Faculty, Staff, and students of the PSC Community. People participating were able to see and taste and record their answers in a survey. Most people who participated did not have a dietary restriction. If they did they were either lactose intolerant or have an uncommon allergy. Most would not make the switch to any of the restrictions. Some said they were willing to try vegan, low-sugar and gluten free. Out of all of the dietary restricted foods, most people preferred the banana and then linzer cookies and tarts follow close after. "All of them tasted great. I couldn't really pick which one's tasted better than the others. Very hard to tell the difference."
