Solutions and Other Mixtures
There are no strict boundaries on the size of colloidal particles, but they tend to vary between 10-9 m to 10-6 m in size.

Solutions & Other Mixtures Heterogeneous Mixtures Amount of each substance in different samples of mixture varies.
A solution is a homogenous mixture of 2 or more substances. The solute is(are) the substance(s) present in the smaller amount(s). The solvent is the substance.

Classification of Matter

Basic Classification of Matter

Adding More Detail to the Basic Classification Scheme FOAM: a substance that is formed by trapping many gas bubbles in a liquid or solid. COLLOID: a type of mixture in which one substance is dispersed evenly throughout another EMULSION: a type of colloid made from two or more immiscible (mix without blending) liquids.

Classification of Colloids Medium / Phases Dispersed phase Gas Liquid Solid Continuous medium NONE (All gases are mutually miscible) Liquid aerosol Examples: fog, mist, hair sprays Solid aerosol Examples: smoke, cloud, air particulates Foam Example: whipped cream, shaving cream Emulsion Examples: milk, mayonnaise, hand cream Sol Examples: pigmented ink, blood, paint Solid foam Examples: aerogel, styrofoam, pumice Gel Examples: agar, gelatin, jelly, silicagel, opal Solid sol Example: cranberry glass – gold dispersed in glass

EXPERIMENT

MAKING CHOCOLATE MOUSSE STEPS Everyone needs to wash their hands Cover the work area with the plastic table cover Choose one group member to handle the chocolate – this person should put on the gloves Break the chocolate into small pieces into the bowl Add ½ cup water Place the bowl on the hot plate and stir until all the chocolate is melted and blended with the water Remove from heat, place on ice and take turns vigorously whisking the mixture until a stable foam is formed Sample and taste if you wish MATERIALS 1 plastic table cover 1 stainless steel bowl 1 wire whisk 1 measuring cup 2 bars chocolate 1 bottle water 1 pair of gloves 1 hot plate 1 ice bath
