STORIA The history of Lazio is close to that of Rome. Inhabited by many peoples, such as the Etruscans (the most advanced of all). 753 BC foundation of Rome. The legend of Romolo e Remo. The Roman Empire (Julius Caesar – Caligula – Nero – Augustus …). Decline of the Empire – presence of the Catholic Church in Rome – the Papal States were created. LA GASTRONOMIA Amatriciana sauce, based on guanciale (cured pork ckeek), pecorino romano cheese and tomato. Originates from the town of Amatrice, in the province of Rieti. Carbonara sauce, based on eggs, cheese (pecorino romano or parmigiano-reggiano), bacon (guanciale or pancetta) and black pepper. From Rome.
