Lab Procedures for Foods Classes at Southwest Junior High Mrs. Joyce Collins

DISHWASHING DOZEN 1.Scrape food from dishes. 2.Stack dishes on one side of the sink. (the sink with the dishwater) 3.Set up the dish drainer and tray.

4.Fill sink half-full with HOT water and a small amount of dishwashing liquid. 5.Use a dishcloth to wash dishes.Use a dishcloth to wash dishes. 6.Rinse in HOT water.

7.Place clean, rinsed items in drainer. 8.Dry items thoroughly with a dish towel. 9.Put items away in correct place. (READ the labels)

10.Dry drainer and tray; put away under the sink. 11.Drain dishwater; clean drain basket; rinse and dry sinks. Place white strainer in drain. 12.Place used dish cloth and towel in laundry basket.

WASHING ORDER Wash items that touch your mouth and those that are the least soiled first. Glasses Silverware Plates Serving dishes Preparation utensils

NO DISHWATER! Do NOT put the following items in the dishwater: Sifter Placemats (wipe with a damp dishcloth and then dry) Hot glass items (let cool, then wash)

Hold and Wash The following items are washed by holding and washing, then immediately rinsing and drying. DO NOT leave them in the dishwater! Rolling pin Kitchen shears Sharp knives

Other Lab Procedures to Remember: Wash the counters, range top, microwave, and table top. Use a wet dishcloth! Empty the trashcan from under the sink. Place the trash bag in the big trashcan by “Ethel” (the refrigerator). Replace the trash bag in your trashcan. New bags are in the laundry basket on the cart.

Replenish dish cloths and towels. Clean ones are in the gray barrel under the windows. Sweep the floor in the unit and around the tables. Brooms are by “Lucy”. Dustpans are on the cart.
