Glencoe Visual Showcase Culinary Essentials

Using four fingers to guide the knife, hold the knife at a 20° angle against the whetstone. 1 Sharpen and True Knives Glencoe Visual Showcase 2 Press down on the blade, keeping it at the 20° angle. Gently draw the knife forward across the stone.

Gently bring the knife off the stone. 3 Sharpen and True Knives Glencoe Visual Showcase 4 Turn the knife over and repeat steps 1–4, using strokes of equal number and pressure.

Hold the steel with the hand that you do not write with. Place your arm in front of you at a 60° angle. 5 Sharpen and True Knives Glencoe Visual Showcase 6 Hold the knife in the hand that you write with. Rest the blade against the steel’s inner side at a 20° angle.

Keeping the knife at a 20° angle, slowly draw the blade along the entire length of the steel. 7 Sharpen and True Knives Glencoe Visual Showcase 8 Repeat step 7 several times on each side of the blade until the knife edge is straightened. 9 Carefully wipe the blade to remove any particles of metal.
