What is a Quickbread? Uses baking powder or baking soda as leavening No rising period- baked as soon as mixed Coarse texture, bumpy crust
Types of Quickbreads- group according to batter thickness 1. Pour Batter Batter thickness – thin, pour from bowl Example: – pancakes, waffles, crepes
2. Drop Batter Batter thickness: – thick, drop from spoon into baking pan Example: – `muffins, breads, coffee cakes Types of Quickbreads- group according to batter thickness

Methods of Mixing Quickbreads Muffin Method dry ingredients in one bowl liquid ingredients in second bowl mix dry and liquid together-just until moist (still lumpy) Overmix-muffin is peaked, smooth crust, tunnels
Biscuit Method -mix dry ingredients together -shortening is cut-in -add liquids and mix with a fork -knead dough -roll out dough and cut out biscuits
BAKING Muffin Tins -grease bottom only -use muffin liners -fill empty cups halfway with water before baking Doneness -Finger touch -Toothpick -Golden brown color
