What is the AOC? The French classifications AOC have been created so as to recognize and protect the specificities of a land and the traditional agricultural practices that are linked to it. Within the context of an AOC the breeder must respect specifications such as the data production (the requirements of the production) in its technical, historical and environmental aspects…. What is the AOP ? The AOP label ( = the PDO quality label which guarantees a protected designation of origin) is the French denomination of an European legal tool. This label, which was created in 1992, protects names of quality products and ensures that only products genuinely originating in a specific geographical region or area are allowed to be identified as such in the commerce. The product must be produced, processed and prepared exclusively in that region with a recognized and certified expertise. The grazing areas of the grassy land : If the salt meadow lamb is famous for its particular taste it is due to three essential elements: The diversity of the vegetation the lambs graze in the salt meadow gives them an unequalled flavour. Each “herbu” (=grassy area) has different geological specificities: the sandy subsoil and nature, the wind, the course of the rivers, the intensity of the tides. All these elements generate a varying vegetation, giving to the lambs flavours which sometimes can be different from a grassy area to another but which are always exquisite. The great distances covered everyday by the lambs shape their muscles. The breeder’s expertise and the respect of the strict specifications imposed by the AOC “prés-salés” (=salt meadow) from the Mont Saint Michel”. For instance it’s forbidden to use GMO and the stockbreeder must produce or buy the forage and the supplementary food in the area of the label. A flock of 1000 ewes beyond the dikes A flock of 1000 ewes beyond the dikes, the vast salt meadows or “herbus” (= grassy areas) are subjected to the ebb and flow of the tide: it’s the sheep’s favourite place. They work on about a hundred hectares in the polders devoted to the feeding of the sheep: the meadow gives hay, cereals, corn, protein peas. Beyond the dike, the “herbus” (= grassy areas) are situated in the maritime field (1 km to reach the sea, the field stretches for 13 or 14 kms). On these 1300 hectares, 4300 ewes from six different farms freely graze without any fences. They are Suffolk sheep or sheep from the Vendée, chosen because of their walking qualities (legs) and their resistance to the cold. They have a very good sense of direction in these vast areas and they don’t take the wrong way when they go back to the sheepfold in the evening. The characteristics of the “prés-salés” lambs from the Mont Saint Michel : Création : EARL Saint Louis - Polder saint louis ROZ SUR COUESNON The characteristics of the “prés-salés” lambs from the Mont Saint Michel: Before the age of four months and a half the lambs won’t graze enough in the grassy areas to be significantly impregnated with them. The AOC lambs are at least 115 days old and they spend more than half of their lives in the “herbus” (=grassy areas). Generally, they are at least 70 days old. The lambs must weigh at least 14 kg. The ideal weight is 18 kg.
