FILLET STEAK WITH CREAM SAUCE Svíčková - sweechkova

700 g fillet steak or beef shoulder (with fat removed) 100 g bacon 1 medium onion 250 g chopped root vegetables ( carrot, parsley, celery) ½ teasp. peppercorns several whole allspice pinch of thyme 2 bay leaves 2 tblsp. castor sugar 1 tblsp. medium flour lemon juice 200 ml sour cream stewed cranberries or cranberry jam Ingredients:

Cut the fat off the meat and lard with strips of bacon. Saute the remaining bacon with the onion and vegetables, add the meat and fry it on all the sides, add the salt and the spices. Then add hot water, cover it, put it in the oven and roast it until it gets soft.

Take out the soft meat and put it in some place and cover it to keep it warm. Put out the spices. Now there are 2 possibilities: 1. mix it all with blnder 2. press it through the sieve

Put the sugar to the pot and let it caramelize. Then add little bit of boiling water. Add the diluted caramel and flour with a little cold water to the mixture we made with the blender before. Bring it to the boil and simmer for a few minutes.

Take off the heat, beat in the sour cream and reheat but do not boil or it will curdle.

Cut the meat into slices. Serve with a slice of lemon and a spoon full of stewed cranberries. Bread dumplings are the best accompaniment to Fillet with Cream Sauce.
