POTATO SALAD

salt pepper Ingredients:600 g boiled peeled potatoes (cool) 200 g boiled root vegetables (carrot, celeriac, parsnip) 100 g onion 1 apple 100 g pickled cucumber 100 g peas boiled in salted water 150 g mayonnaise

Dice the potaoes and season with salt and pepper, add diced root vegetables, then add peas and finely chopped pickled cucuber and onion, and cubed peeled apple.

Then stir in mayonnaise.

Note: The potato salad will be less rich if you replace part of the mayonnaise with Sour cream or plain yoghurt. You can replace the boiled root vegetables with pickled mixed vegetables.
