How are salad greens different from plain old lettuce? Salad greens are vegetables that are often served raw and can act as a bed for other salad ingredients. They are usually a variety of different lettuces.

Why pick salad greens? Variety is good for you. Different lettuces have different amounts of different vitamins. Salad made with a mixture of salad greens often has more vitamins, thanks to the variety. There are four main categories of lettuce: looseleaf, butterhead, crisphead, and romaine.
