It may need some modifications to work fully in the classroom. Please look out for revised version 2.0, available from

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Gordo has Ally apply his ‘secrets’ about energy transfer to cooking processes ELABORATE [Apply ideas about heat transfer to different contexts.] EXTEND Students become Ally a trainee chef at Gastro Heaven. ENGAGE The boss, Gordo, finds out if Ally knows how food gets hot and cooks. ELICIT Ally forms her own ideas about heat transfer to learn Gordo’s secrets EXPLORE Jimella models the heat transfer processes for Ally EXPLAIN The chefs test Ally’s understanding of the processes that make food hot - AfL EVALUATE 7E Learning cycle : What’s Cooking

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Activity 1: What’s cooking? – engage, elicit and explore sections 2 Engage ElicitExploreExplainElaborateExtendEvaluate I’m Gordo – I’m the boss. I hear you’re the new trainee. You’d better be a fast learner – my restaurant’s got 3 Michelins. And I bet you think I’m talking about tyres. Wow! Look at that wonderful food. I’ve no idea how you prepared it. Have you got any idea how to cook?

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Activity 1: What’s cooking? 3 Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Engage ElicitExploreExplainElaborateExtendEvaluate OK. Your first test – you’d better get it right. Let’s see what you know about food. See these crazy menu items? Tell me which belong on a plate, and which belong in the bin? And then re-arrange the crazy menu items to give a better menu. Sort it out! Now! Grilled Stir fry Steamed Roast Fried Barbecue Raw Deep fried Boiled Spit roast Egg Cheese and tomato Sprouts Cabbage Lettuce Potato Chicken Corn on the cob Chips Toast Carrots Toasted sandwich

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Activity 1: What’s cooking? Engage ElicitExploreExplainElaborateExtendEvaluate Not a bad effort… for a novice – but you still know NOTHING about cooking them. Grilled Stir fry Steamed Roast Fried Barbecue Raw Deep fried Boiled Spit roast Egg Cheese and tomato Sprouts Cabbage Lettuce Potato Chicken Corn on the cob Chips toast Carrots Toasted sandwich 4

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Activity 1: What’s cooking? 5 Engage ElicitExploreExplainElaborateExtendEvaluate Tell me which secret fits with which method. It had better have good thinking or you’re for it! Stir fry Grilled Roast Steamed Fried Barbecue Deep fried Spit roast Boiled Toasted sandwich Look at the ten crazy menu items we use. But my SECRET is there’s only 3 ways that food gets hot. Cooking is either direct contact with a hot surface, or hot air or liquid, or heat rays Look at the ten Crazy menu methods we use. But my SECRET is there’s only 3 ways that food gets hot.

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Activity 1: What’s cooking? 6 Your cooking ideas are I’m going to see if a week in our gastro laboratory can teach you how food gets hot Jimella will look after you. Hi Ally. You need to work hard at this to find out what IS cooking.. Engage ElicitExploreExplainElaborateExtendEvaluate

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Activity 1: What’s cooking? 7 Discuss what you saw, sort out which of Gordo’s secrets apply to each activity. I’ve prepared some activities in the Gastro lab to help you find out how food gets hot. Use the links below to the activities. Do what it says – and think carefully how the heat energy travels. Work in groups then compare theories. You’ve got to know all about Gordo’s secrets Engage ElicitExploreExplainElaborateExtendEvaluate

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original 8 1 Light a Bunsen. Engage ElicitExploreExplainElaborateExtendEvaluate Activity 1: What’s cooking? This shows all three of Gordo’s secrets. But which is which? c) Bench heat – feel how far the heat travels through the bench below the bunsen. a)Rising heat – Feel the heat rising above the Bunsen. Hold a spiral suspended from a thread above the Bunsen. b)Gauze heating – how close can you feel the heating when you put your hand at the side of the flame? Then put the Bunsen under a gauze on a tripod, let it heat up. Again how close at the side can you feel the heating?

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Activity 1: What’s cooking? 5 Radiation is the term used when heat energy travels in rays. Radiation can travel through anything transparent. It does not need particles to help it move. Engage ElicitExploreExplainElaborateExtendEvaluate Heat radiation travels through space, or anything transparent – just like light rays can. Heat radiation is called infra red rays. The rays fall on materials and make them hot. All hot materials give out heat rays. You can feel heat rays when they fall on your skin. The red hot gauze on the tripod gives out lots of heat rays. Heat rays pass through the air and through the hole in the card. Heat rays travel in straight lines and make heat shadows just like light. Gordo’s third secret

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Activity 1: What’s cooking? 9 Explain to Gordo how these use his secrets! You’ve got a clue to help and then 5 seconds think before he’s starts shouting at you. Use the right words – or he will shout even louder! Engage ElicitExploreExplainElaborateExtendEvaluate Which secret it usesClue It glows bright red. Copper is the best conductor. Put hotter dishes on the top shelf. Keep the food in contact with this. These shine gently. Use this and don’t burn your hands. Steam rises. Water bath under servery Heater lamps over servery Wooden spatula and wok Griddle Oven Copper saucepan Halogen hot plate

Untrialled Beta activity from the Forensics unit of the WikiedScience curriculum © Science UPD8 at page may have been changed from the original Activity 1: What’s cooking? 11 Engage ElicitExploreExplainElaborateExtendEvaluate n Draw a large poster of the meal and put diagrams on it to illustrate how the heat travelled to the food. n Write a script for Ally to describe how each part of the meal was cooked and how the heat from the cooker was transferred to the food to cook it. n Use all the NEW WORDS you have met. Ally has prepared a fine but simple celebration dinner at Hesto’s Resto. It has these foods in it. nA sponge cake for dessert baked in an oven. nSlices of tender meat grilled under an electric grill. nStir fried vegetables cooked quickly and crisply.
