Solution: Clean these areas on a regular basis or eliminate truss design and replace with a 1-piece, double-T poured concrete ceiling. 14 Unscreened glass window with a flat ledges is a potential source of contamination from broken glass and is a collection site for soda cans, dirt, and other debris. Solution: Replace glass with Shatter proof plastic and ledges should slant at a 60 degree angle. Better yet, eliminate all windows from the processing facility. 8 The door to the restroom opens directly into the processing area. Solution: Relocate restroom to another part of the building. Doors should be self-closing with continuous negative air ventilation. 6 Concrete floors are susceptible to cracks - another nesting spot for dangerous bacteria. Solution: A better choice would be an impervious tile or monolithic floor that is more durable and easier to clean 9 This puddle of water is the result of a floor with low areas and poor drain placement. Solution: Squeegee water to drains as soon as it appears. Floor should slope down to the drain at ¼ inch per foot. 13 Loading dock door opens directly to the outside providing easy entry for rodents, insects, and birds. Roll-up mechanism is a potential collection site for pests. Solution: Exterior doors should open from a staging or warehouse area instead of directly outdoors. Keep doors closed when not in use and inspect for pests. 4 Mixing tanks are not covered to prevent overhead contaminants from falling into the product. They are also too close to the wall. Solution: Keep tanks covered. When possible, pump ingredients directly into closed tanks. 10 This equipment is placed directly on the floor and is too close to the wall for easy cleaning and pest inspection. Solution: Move equipment 18 inches away from the floor and elevate 6 inches off the floor. 15 Electrical conduit box is too close to the wall providing a warm and secure place for insects to live. Solution: Provide at least a 1 inch clearance away from walls. 17 Pipelines pass over open product. Any condensate – a prime breeding ground for Listeria bacteria – could contaminate exposed product below. Solution: Direct pipes away from product areas. 5 Processing control equipment is too close to wall to allow easy cleaning and inspection. The flat top surface is also a site for debris to collect. Solution: Move equipment at least 18 inches away from walls and avoid flat surfaces Packages coming off the line are exposed to forklift exhaust fumes, wood splinters from broken pallets, and cardboard- loving insects. 1. Location also encourages workers to step over product to access door. Solution: Keep product away from outside door. Forklifts and pallets should be kept out of processing areas. Discard or repair damaged pallets. 7 Struts make access under tanks for cleaning difficult. Solution: Minimize the number of supports under equipment to allow easy access. 3 Gravel roof collects difficult to remove debris and vegetation that attract pests such as insects, rodents, and birds. Solution: Replace gravel roof with smooth membrane type and regularly inspect for debris accumulation; especially around air exhaust system. 2 Light fixtures may shatter sending glass shards onto exposed product. Flat surface is a collection site for dust and insects. Solution: Use only shatter proof light bulbs or shields. Regularly clean tops of light fixtures or recess them to eliminate flat top surfaces. 11 Squared floor/wall junction is hard to clean thus allowing dirt to accumulate. Solution: Use coved blocks or tiles at the floor junction. 12 Corrugated metal wall is rusting. Ridges are dust and debris collection sites and are potential runways for rodents. The bricks are laid in an alternating pattern that provides sites for moisture to collect and microbes to grow. Solution: Install uniform wall material and lay bricks using the “soldier” method.

Packaged product is conveyed out of the processing area into the warehouse area for palletizing. Walkway protects product from overhead contamination. Continuous tile wall eliminates ledges. Windows are absent. Note “soldiered” tile pattern that facilitates water drainage. There is adequate clearance between equipment and the wall for easy cleaning and pest inspection. Piping is placed so they are not directly over product areas. Ingredients are pumped in and processed product is pumped out of enclosed tanks. Restroom has been moved and is replaced with handwashing station equipped with warm water, disposable towels, and trash container. Sink is operated with a foot pedal to avoid recontamination of hands.. Properly designed door opens into a warehouse area and is kept closed when not in use. Floor wall junction is coved to eliminate sharp angle that accumulates dirt. Control panel is pulled away from the wall and the top is sloped. Area under equipment is easily accessible for cleaning and maintenance. One-piece double T poured concrete ceiling eliminates the need for dust collecting support trusses. Membrane covered roof prevents build- up of debris and is easy to clean Lights are recessed into the ceiling to eliminate dust collection sites and are made of shatter proof materials. Tile floor is made from impervious materials and is designed to withstand expected physical and chemical stresses. It is adequately sloped to drain liquids into the drain. Equipment is raised 6 inches off the floor for easy cleaning
