Enzymatic Browning

Browning results from the fresh fruit being exposed to air and being affected by the oxygen in the air. High-acid fruits do not brown when exposed to air. Browning is not a reversible process.

To prevent browning, cover the fruit immediately after peeling it with a juice containing a high Vitamin C content, or salad dressing.

CYANIDE IN APPLES "Amygdalin" is a cyanogenic glycoside compound which commonly occurs in the seeds or kernels of apples, almonds, apricots, cherries, and peaches Normally, the presence of amygdalin alone in these seeds and kernels is not dangerous, however, cyanide can be formed when the seed is crushed and moistened. Acute intoxication and death have been reported in children following the ingestion of apricot seeds, which are capable of releasing 217 mg of cyanide per 100 g of moist seed.

Apple Turnovers

1 egg & 1 t milk beaten together Basic Pie Dough 1/3 cup all-purpose flour 1/2 cup vegetable shortening 1/2 teaspoon salt 3 tablespoons cold water Egg wash 1 egg & 1 t milk beaten together Pre-heat oven to 400°F. Roll out your pie dough on a lightly floured surface and cut into six 5x5-inch squares. Place one apple slice in the center of each square. Use a pastry brush to brush the egg wash on the border of the pastry. Fold each pastry into a triangle, enclosing the filling, and crimp edges with a fork. 6. Brush the tops of the pastries with more of the egg wash. 7. Cut 2 or 3 small steam vents in the top of each turnover. 8. Place the pastries in the oven and bake at 400°F for 20 minutes, or until puffed and golden.
