I visited the Sage on Sep I hoped to gain a new appreciation for how the Sage runs. I learned that it takes everyone working together and talking about what they are doing and what has been done so that everyone in the dining room gets what they ordered. I learned that they have different managers ensuring things in their area are running as smooth as possible. I learned that the line is really different stations and everyone has a different job and it is not a free for all. Most of all I learned the you have to do your prep work before the Sage opens or you are already behind the power curve. Every time I have been at the Sage someone is doing prep work getting ready for something. Don’t wait until it’s ordered to start working on
