OVS Training SFSP Meal Pattern Training for School Sponsors Updated May 2015

SFSP OVS is different than NSLP There are a few differences in the SFSP meal pattern OVS and NSLP meal pattern OVS Make sure your staff understands these differences Schools may continue to use the NSLP meal pattern during SFSP, but you must follow the NSLP meal pattern completely and all OVS rules pertaining to NSLP

Breakfast Here are the highlights: SFSP OVS does not allow for 2oz eq grain items to count as 2 items SFSP OVS states that you must count same grain items as individual items, not ounce equivalents Therefore you must offer one additional item from the minimum meal pattern requirements to operate SFSP OVS if you are serving a 2oz grain item Similarly, you cannot serve 2 pieces of toast and count them as 2 items, the 4 items offered must be different foods Combination type items (sausage biscuit, pancake wrap, etc) are still counted as 2 items where applicable

Breakfast SFSP Breakfast Meal Pattern Requirement 1 serving grain/bread ½ cup fruit or 4 fl oz 100% fruit juice 1 cup milk (No OVS allowed if you use the above meal pattern) SFSP Breakfast OVS Requirements 4 menu items from the fruit/vegetable, bread/grain, or meat/meat alternate components

Breakfast Example: 1 piece of toast 1 bowl of cereal ½ cup peaches 1 cup chocolate milk The child must take at least 3 of the 4 offered items, but can take all 4 if desired

Breakfast Example 1 piece of toast ½ cup applesauce ½ cup grape juice 1 cup milk This menu is acceptable because it offers 4 items from the required meal pattern components.

Breakfast Example 1 piece of toast 1 cheese stick ½ cup orange juice 1 cup milk This menu is acceptable because it offers 4 items. The 1 serving grain requirement is met with the toast and the cheese stick is counted as a 4th item.

Breakfast Example 1 biscuit ½ cup carrots ½ cup fruit punch (100% juice) 1 cup of milk This menu is acceptable because it offers 4 items and covers the meal pattern requirements. *Note that in SFSP meal pattern, there are no vegetable subgroups, so when serving a vegetable at breakfast, you are not required to meet the subgroup requirements for the week.

Breakfast Example (Not acceptable for OVS) 2 pieces of toast ½ cup pineapple 1 cup milk This menu is not acceptable because the pieces of toast are the same food, the four offered items must be different foods.

Breakfast Example (Not Acceptable for OVS) 1 Pillsbury Frudel (2oz grain equivalent) ½ cup orange juice 1 cup milk This menu is not acceptable for SFSP OVS because each menu item is counted separately, regardless of grain/bread equivalent contribution. This menu only offers 3 items.

Breakfast Example (not acceptable for OVS) 1 boiled egg ½ cup grapes ½ cup orange juice 1 cup of milk This menu is not acceptable because it contains no grain item.

Breakfast It is important that those counting meals understand the OVS differences including: Students must take 3 of the 4 items offered Items are counted individually and there are no grain items that count as 2 items taken, but combination foods can be counted as 2

Breakfast Sponsors may elect to operate the School Breakfast Program meal pattern during the summer OVS rules follow whichever meal pattern is being used Please keep in mind when electing to continue the SBP meal pattern that OVS rules for the SBP meal pattern remain the same and students must take at least ½ cup of fruit and one full cup of fruit must be offered

Lunch Let’s switch to SFSP Lunch Requirements! The SFSP meal pattern: 1- serving bread/grain 2 oz meat/meat alternate 2 servings of fruit/vegetable totaling ¾ cup 1- 8oz serving of milk You must offer 5 items from 4 components:

Lunch SFSP OVS Requirement- Children must take 3 items from 3 different components Here’s the change- OVS requirements at lunch refer to components and not items The 2 servings of ¾ cup fruit/vegetable only count as 1 component A child cannot take ½ cup pineapple, ¼ cup carrots and a package of crackers to count as a meal

Lunch Menu Offered: 1 pbj sandwich (2 slices of bread, 4T peanut butter, and jelly) ½ cup of broccoli ¼ cup frozen fruit juice bar 1 cup of milk

Lunch The child takes: Does this count? 1 pbj sandwich (2 slices of bread, 4T peanut butter) 1 cup of milk Does this count? Yes, this meal counts because the sandwich counts as 2 components and the milk is the 3rd. Children are not required to take a fruit of vegetable in SFSP.

Lunch The child takes: Does this count? ½ cup of broccoli ¼ cup frozen fruit juice bar 1 cup of milk Does this count? No, the child has taken 3 items, but only 2 components. Fruit/Vegetable is only considered one component in the SFSP meal pattern.

Let’s Play “Is this a Meal?” (SFSP Edition) Here’s the SFSP menu: Turkey Sandwich (2 items) (1 hoagie roll, 1oz turkey, 1 oz cheese) ½ cup of applesauce ¼ cup of fresh broccoli 1 cup of milk

The Child Chooses: Is this a meal? Turkey Sandwich (2 items) (1 hoagie roll, 1oz turkey, 1 oz cheese) ½ cup of applesauce ¼ cup of fresh broccoli 1 cup of milk Is this a meal?

Yes! This is an acceptable meal because the child has chosen 4 of the 5 offered items and at least 3 of the 4 components.

Is this a meal? Turkey Sandwich (2 items) (1 hoagie roll, 1oz turkey, 1 oz cheese) ½ cup of applesauce ¼ cup of fresh broccoli 1 cup of milk

No! While the student selected 3 items, only 2 different components were taken.

Is this a Meal? Macaroni and Cheese (2 items) (2oz cheese, 2 oz bread/grain) ½ cup Green Beans ½ cup peaches 1 cup of milk

Yes! The student has take 3 items from 3 components. Children are not required to take a fruit or vegetable if you are following the SFSP meal pattern.

Let’s consider SFSP Breakfast: Is this a meal? Frudel- Cherry 2oz CN Label grain contribution 1 oz Cheese Stick ½ Orange Juice 1 cup of Milk

No! Under SFSP meal pattern rules, one grain food item cannot count as 2, even if the ounce contribution is 2 according to the CN label. An additional item must be taken to count as a meal.

Is this a meal? Breakfast Pizza (2 items) 1oz grain, 1 oz m/ma ½ cup strawberries 1 cup of milk

Yes! Although only 2 items were taken, the pizza may count as 2 because it is a combination item and contains different food items from different components. Additionally, students are not required to take a fruit at breakfast under SFSP OVS rules.

Is this a meal? Granola Bar Cereal 1 apple 1 cup of Milk

Yes! Although only 2 components were taken, the 3 item requirement at breakfast has been met with 2 different grain items and a milk.
