Agenda  Review Chapter One Problems  Chapter 2 & 3  Next week

Units of Measure Metric Measures Chapters 2-3

Learning Objectives  List the names and abbreviations of the units of measure most commonly used in the foodservice industry  Demonstrate your understanding of the relative sizes of the measuring tools used in the foodservice industry  Recall the equivalents of volume measures without references  Recall the equivalents of weight measures without references  Explain the difference between weight and volume measurements  Define a fluid ounce and explain how it differs from an ounce

Volume vs. Weight  Volume- the space filled by a liquid, gas or solid. -Tesapoon (Tsp.) - Tablespoon (Tblsp.) - Fluid Ounce (Fl. oz.) - Cup (c.) - Pint (pt.) - Quart (qt.) - Gallon 9gal.)  Weight- the heaviness of a substance. - Ounce (oz.) - Pound (# or lb.)

Volume vs. Weight  Liquids are measured by volume  Solids and dry ingredients are measured by weight.  Liquids can be accurately measured by weight.  Some small critical dry ingredients may be measured by volume.

Equivalents  Volume 3 tsp. = 1 Tbsp. 2 Tbsp. = 1 fl. oz. 8 fl. oz. = 1 cup 2 cups = 1 pint 2 pints = 1 quart 4 quarts = 1 gallon  Weight 16 oz. = 1 pound

More Equivalents  1 cup = 16 Tbsp.  1 cup = 48 tsp.  1 pt. = 16 fl. Oz.  1 qt. = 32 fl. Oz.  1 gal. = 4 quarts  1 gal. = 8 pints  1 gal. = 16 cups  1 gal. = 128 fl. Oz.  ½ gal. = 64 fl. Oz.

Metric System  Most common used system in the world. (Except for the United States)  Why should you learn it? Working in other countries. Working with recipes/formulas from other countries. Measuring Wine & Spirits. When purchasing ingredients from overseas.

Metric Units of Measure  Liter – L (volume)  Gram – g (weight)  PREFIXES Kilo = 1,000 Deka = 10 Deci =.1 (1/10) Centi =.01 (1/100) Milli =.001 (1/1000)

Metric Prefixes  GRAM Kilogram = 1000 grams Dekagram = 10 grams Decigram =.1 grams Centigram =.01 grams Milligram =.001 gram  LITER Kiloliter = 1000 Liters Dekaliter = 10 Liters Deciliter =.1 Liter Centiliter =.01 Liter Milliliter =.001 Liter

Metric Equivalents  1 oz. = grams  1 kilogram = 2.21 pounds  1 liter = 33.8 fl. oz.

Assignment due next week:  Read Chapters 4-5  Complete Review Questions: Chapter 1 - #2-86 even only Chapter 2 - #2-28 even only Chapter 3 - #2-22 even only
