Contents History Current Process Overview –Brewing –Mashing & Straining –Brew Kettle & Cooling –Fermentation & Lagering –Filtering & Tasting –Filling the bottles & Packaging the Goods Process Under Improvement

History of Budweiser Adolphus Busch immigrated to US from Germany in 1857 –began working in St. Louis –Formed a successful brewery supply company Eberhard Anheuser purchased the brewery in 1860 –Renamed the company Anheuser and Co. –In 1869 Busch purchased half ownership of the brewery Adolphus Busch Eberhard Anheuser

History of Budweiser In 1876, Busch and his good friend, Carl Conrad, created Budweiser. only the finest ingredients The company was renamed Anheuser- Busch Brewing Association in 1879 Busch became president in 1880 He reigned as president for 33 years

Brewing Budweiser has been brewed since 1876 Known as the "King of Beers“, Budweiser is brewed using only the finest, all- natural ingredients Budweiser also attributes their fine taste to their time-honored brewing process. Budweiser considered beer brewing a combination of art and science. The process that goes into brewing Budweiser Beer combines traditional brewing methods with the latest innovations in brewing. Anheuser-Busch “Brewmasters” taste the beer during each step to ensure its consistency and taste.

Mashing & Straining Today, Budweiser is brewed using the same standards and methods as those used by Busch over 100 years ago. This method includes 1.Stainless steel mash tanks in which the brewing process begins. 2.The ground barley malt is then mixed with water. 3.Milled rice is then mixed with the barley malt and water solution in a cooker. 4.The rice is boiled and combined with the malt in the mash tank. 5.The natural enzymes in the malt then break down the grain's starch into fermentable sugars. The mixture from the mash tanks is then strained and separated from the spent grain husks. The clear, sweet amber liquid that is extracted is called wort. Barley malt Milled rice

Brew Kettle and Cooling After the mixture from the mash tanks is strained, the wort is then transferred into a brew kettle. The wort is then heated and brought to a boil. Natural hops are then added Hops are the spices of beer Before fermentation, the wort is pumped through a vessel called a wort receiver. Now, the wort is cooled to a proper temperature for receiving yeast

Fermentation & Lagering PRIMARY FERMENTATION Yeast (Budweiser yeast is a lager yeast) is added to the cooled wort –During this stage of the brewing process, the wort becomes beer. LAGERING After a layer of beechwood chips is spread on the bottom of the lager tanks, the beer is transferred into the tanks. A portion of freshly yeasted wort called Kraeusen is added. As secondary fermentation occurs, the beer is naturally carbonated and its final flavor develops - resulting in a smooth-tasting beer. This process is unique to Anheuser-Busch. Beechwood Chips

Filtering & Tasting After the Lagering process, the beer is chilled, stabilized, and filtered. Following the chillproofing, the beer is stored in settling tanks at 32° for 2 days to complete settling. It is then given a final filtering. At each step in the process, the beer is tasted by a Brewmaster to ensure consistency and drinkability. After the final filtration, the beer is held in a filtered beer tank for a final quality control check and Brewmaster tasting. It goes to packaging.

Filling the bottles & Packaging the goods The packaging process begins with the bottle rinser The bottles then pass by an electronic inspection device, before they go to the pasteurizers. –Adolphus Busch introduced pasteurization The finished beer is packaged into bottles, cans and draft kegs. –The draft beer line is capable of producing the equivalent of 2.3 million 12 oz. containers per day.

Hops Market The inventory of hops held by growers, dealers, and brewers on March 1, 2009, totaled 82.0 million pounds, 24 percent above March 1, 2008, and 17 percent above March 1, March hop stocks have not been this high since March 1, 2004 when holdings were 85.0 million pounds. Stocks held by brewers, at 40.0 million pounds, were up 11 percent from a year ago, but 5 percent less than March 1, Stocks held by growers and dealers on March 1, 2009, totaled 42.0 million pounds, 40 percent more than March 1, 2008, and 50 percent above March 1, 2007.

Problems With the Hops Market Major problem that is emerging in the hops market is hops diversity. There is no diversity left in the market which is leading to all beer eventually having the same flavor Hops farmers are being forced to sell their product at a lower price therefore they stop producing higher grade crops

Problems Cont’d The loss of diversity will lead to all beer tasting the same which leads to no competition The beer market thrives on market competition, without diversity it wont matter what brand of beer consumers will buy Budweiser prides themselves on having unique beer that is crisp and refreshing and unlike any other beer on the market. Refers to themselves as the “King of Beers”

Location Analysis

Important Growing Facts Hop is adapted to a wide range of climatic conditions; ample moisture early followed by warm, dry weather is ideal. In areas where rainfall is lacking and the water table is more than 5 ft deep, irrigation may be required. A deep sandy loam is best. Poorly drained, strongly alkaline or saline soils should be avoided. Practically all of the hop produced commercially in the United States today, are grown on large "hop ranches" along the Pacific coast in Oregon, northern California and Washington

Major US Truck Routes Oregon is the closest = shortest truck route A B C

MAP OF OREGON COUNTIES

Harney County Malheur County Malheur county receives more for the average value of agriculture products than Harney County Harney of Malheur County?

Approx in. Outside the city of “Basque”

Our Solution Diversity in the hops market means the different amount of alpha acids are used during the growing process Most large companies just use alpha acids for the bitterness in the beer Many feel that the larger companies do not care about aroma and taste If Budweiser were to produce their own hops the company will be able to have control of their own supply and put more effort into continuing to the best in the industry.
