F OOD & N UTRITION

Food supplies your body with nutrients, substances that the body needs to regulate bodily functions, promote growth, repair body tissues, and obtain energy. F OODS S UPPLY N UTRIENTS There are six classes of nutrients: carbohydrates, fats, proteins, vitamins, minerals, and water. Carbohydrates, fats, and proteins can all be used by the body as sources of energy.

The foods you eat are your body’s energy source. F OODS S UPPLY E NERGY You need energy to maintain your body temperature, keep your heart beating, and enable you to understand what you read.

When your body uses the nutrients in foods, a series of chemical reactions occurs inside your cells. As a result, energy is released. F UEL FOR Y OUR B ODY Metabolism is the chemical process by which your body breaks down food to release this energy. Metabolism also involves the use of this energy for growth and repair of body tissue.

The amount of energy released when nutrients are broken down is measured in units called calories. W HAT ARE C ALORIES ? The more calories a food has, the more energy it contains.

Carbohydrates are nutrients made of carbon, hydrogen, and oxygen. C ARBOHYDRATES Carbohydrates supply energy for your body’s functions. Simple carbohydrates are also known as sugars. S IMPLE C ARBOHYDRATES Complex carbohydrates are made up of sugars that are linked together chemically to form long chains. Complex Carbohydrates

Fiber is a type of complex carbohydrate that is found in plants. F IBER A high-fiber diet may help prevent heart disease may reduce the risk of colon cancer helps prevent constipation

At a meal, you usually eat more carbohydrates than your body can immediately use. Y OUR B ODY ’ S E NERGY R ESERVES The extra glucose is converted into a type of starch called glycogen. If you eat so many carbohydrates that the body’s glycogen stores are full, then the excess carbohydrates are stored as fat instead. Nutritionists recommend that 45 to 65 percent of a person’s daily calorie intake come from carbohydrates. D AILY C ARBOHYDRATE I NTAKE It is better to eat foods rich in complex carbohydrates rather than simple carbohydrates.

Fats are made of carbon, hydrogen, and oxygen. F ATS Fats supply your body with energy, form your cells, maintain body temperature, and protect your nerves. Unsaturated Fats have at least one unsaturated bond in a place where hydrogen can be added to the molecule. U NSATURATED F ATS Unsaturated fats are usually liquid at room temperature. Unsaturated fats are classified as either monounsaturated fats or polyunsaturated fats.

Fats that have all the hydrogen the carbon atoms can hold are called saturated fats. S ATURATED F ATS Saturated fats are usually solid at room temperature. Too much saturated fat in your diet can lead to heart disease. Nutritionists recommend that 20 to 35 percent of your calories come from fat, primarily unsaturated fat. D AILY F AT I NTAKE

Cholesterol is a waxy, fatlike substance that is found only in animal products. C HOLESTEROL Your body needs a certain amount of cholesterol to make cell membranes and nerve tissue, certain hormones, and substances that aid in the digestion of fat. Trans fats are made when manufacturers add hydrogen to the fat molecules in vegetable oils. T RANS F ATS Trans fats are found in margarine, chips, and commercially baked goods. Trans fat seems to have many of the negatives of saturated fat.

P ROTEINS Proteins can serve as a source of energy. The most important function of proteins is their role in the growth and repair of your body’s tissues. Nutrients that contain nitrogen as well as carbon, hydrogen, and oxygen are called proteins. Proteins are long chains of smaller “links” that are bound together chemically. Building blocks of protein. A MINO A CIDS These smaller substances are known as amino acids. The nine amino acids that the body cannot manufacture are called essential amino acids. E SSENTIAL A MINO A CIDS

Protein from animal sources is complete protein. C OMPLETE AND I NCOMPLETE P ROTEINS It contains all nine essential amino acids. Most protein from plant sources is incomplete protein. It lacks one or more of the essential amino acids. Nutritionists recommend that 10 to 35 percent of your calories come from proteins. D AILY P ROTEIN I NTAKE People who don’t eat meat can combine two or more plant protein sources that, taken together, provide all the essential amino acids. Proteins for Vegetarians

R EADING A F OOD L ABEL To judge the nutritional value of a food, do not rely on advertisements or nice- looking packages. Instead, read the food label carefully.

Read the ingredients list. Ingredients are listed in order by weight, from most to least. R EADING A F OOD L ABEL Become familiar with terms for different kinds of ingredients. Check for food additives. Note if the food is enriched or fortified. If you have dietary restrictions or allergies, look for those foods on the ingredients list.

Note the number of servings per container. Serving sizes are standardized for more than 100 different food categories. R EADING A F OOD L ABEL Note the number of calories in one serving. Daily calorie intake depends on a person’s: age sex weight basal metabolic rate activity level

Look at the percentages of the Daily Values. Note the percentage Daily Values for nutrients that you should limit. R EADING A F OOD L ABEL Check the percentage Daily Values for fiber and valuable vitamins and minerals. Look for any health or nutrient claims. Because these claims are regulated by the FDA, they reveal useful information about the product.
