Brief Explanation of our Process To avoid confusion, and to conform to Tony P’s recipe standard, we utilized one unit of measurement: ounces. 1, 25 lb. bag of Italian bread crumbs = 400 oz. $38.56 ÷ 400 oz. = $ per (1) oz. $ x (2) oz. = $ / (1) serving We utilized this same method for every ingredient of every dish to gain the most accurate food cost.
