Chinese cuisine Chinese cuisine reflects the country's diverse environments and ways of living. Chinese foods are the story of the country's traditions and its people.

China has four culinary traditions. Pork Meat Balls Shandong 鲁菜 Spicy Mapo Toufu Sichuan 川菜 Sweet Sour Fish Jiangsu 淮扬菜 Shrimp Dumplings Guangdong 粤菜

Four culinary traditions Guangdong Cuisine (Cantonese Food/Yue Cuisine 粤菜 ): sweeter, favoring braising and stewing, adding various sauces. Sichuan Cuisine (Chuan Cuisine 川菜 ): spicy and bold, using lots of chili, garlic, ginger and peanuts. Shandong Cuisine (Lu Cuisine 魯菜 ): salty and crispy, favoring braising and seafood. Jiangsu Cuisine (Su Cuisine 苏 / 淮扬菜 ): fresh, salty and sweet, favoring soups and precise cooking techniques.

Same Food – Local Flavors: Hot Pot 火锅 The Hot Pot has a history of over 1000 years and is eaten all over China. 火锅有 1000 多年的历史，几乎每个中 国人都爱吃火锅。 火锅火锅

Same Food – Local Flavors: Hot Pot 火锅 The hotpot, sometimes called the Chinese fondue, consists of a simmering metal pot with broth in the middle of the table. Raw meats (thinly sliced), seafood, vegetables and mushrooms are brought to the table. After cooking in the broth, these items are dipped in special sauces from each location.

Same Food – Local Flavors: Hot Pot 火锅 Each location has its own flavors. 每个地方都有自己喜欢的 口味和传统 Have you ever cooked food at your table and then dipped it in sesame, chili or a sauce? What ingredients did you use?

Famous Local Food in China 当地特色食物 Korean cold noodles 朝鲜族冷面 Soup dumplings 灌汤包 Shaomai 烧麦 Glutinous rice cakes 打糕 Ice flower fried dumpling 冰花煎饺 Which of these foods do you think you might enjoy?

Prepare for our cultural cuisine video Step 3

Cultural Cuisine Video Next session, our class will create a video to send to our China partners. In this video, we will ask questions about food related topics, such as typical Chinese meals, food preparation, eating habits, and more. Our China partners will view our video, answer our questions, and send their responses back to us in a PowerPoint. Our China partners are creating a video for us to watch and to answer their questions about our food and eating habits.

Cultural Cuisine Video 1.Review the notes you took while viewing the Chinese cultural cuisine slides. You will work in small groups. Each group will one of the following food-related topics: o typical meal o local fresh foods o number and types of daily meals o favorite snack o table setting o purchasing food o preparing food o eating and drinking habits o eating at school o desserts

Cultural Cuisine Video 1.Write a question to ask our China partners about your groups’ assigned food-related topic. Write a question that asks for many responses or is open ended, such as: o Can you tell me about the last time you used a hot pot? What ingredients did you use? Avoid simple questions that ask for a one-word response, such as: o Do you like soup dumplings? o What is your favorite food?

Cultural Cuisine Video 3.Share your group’s question with the whole class. 4.Revise the question based on their feedback.
