Summer Study Abroad in France: Mediterranean Diet and Lifestyle May 12-June 2, 2012 Open to all MU students (no prerequisites, specific majors, or class standing requirements) MU academic credit (3 hours) Led by MU faculty, Dr. Dale Brigham

Course Objectives: 1. Identify the ways foods are produced, marketed, and consumed in France as compared to the U.S. 2. Contrast social, cultural, and environmental influences on food acquisition, storage, and preparation in France with those in the U.S. 3. Evaluate public policies and practices related to food, nutrition, and health in France as compared to the U.S.

Program Overview Three-week immersion into the health benefits of the Mediterranean diet and way of life, as experienced in France. The program will be based in Beauvais, a historic city in the Picardy region of France, one-hour north of Paris. Students will study French food culture and gastronomy, French family cooking, and the benefits of the French diet on health.

Program Overview The program includes: Field trips to Paris, Versailles, and the French seacoast French cooking classes, culinary demonstrations and food tastings Tours of regional cultural and historic sites

What will I study? Students will earn three (3) MU credit hours by attending and actively participating in classroom instruction, cooking classes and demonstrations, that include the following topics: Health Benefits of the Mediterranean Diet The French Paradox French Food Culture and Gastronomy French Family Cooking Food and Public Health

Where will I live? LaSalle Beauvais Polytechnic Institute, a prestigious small college on the outskirts of Beauvais, France Students will live in residence halls and study alongside French students LaSalle Beauvais services include: dining hall, residence halls with wireless access, computer labs, laundry facilities, gym, and student recreation center

Where will I travel? Field trips to Paris, Versailles, the French seacoast, and other regional cultural and historic sites Paris is only one hour away from campus by train, which depart Beauvais every hour for Paris. Beauvais international airport (5 minutes from the LaSalle Beauvais campus) offers low-cost, regular flights to other European countries.

Expectations Participation in all classes and excursions is expected of each student. Behavior: You are a guest in another country and a representative of the University of Missouri. Course Work: Students will complete all course work, including tests, presentations and papers, in France. All classes will be taught in English.

Program Costs Estimated program costs Saturday, May 12 – Saturday, June 2, MU Educational Fees for 3 Credits: $785 MU Information Technology Fees for 3 Credits: $37 MU Human Environmental Sciences Course Fees for 3 Credits: $123 MU Study Abroad Administrative Fee: $75 HTH Student Health Insurance: $35 Early Program Fee 2 : $3,500 Total Program Costs: $4,555 Additional Costs: Round Trip Airfare (estimated):$1,400 Personal Expenses (estimated): $300 Total Additional Costs: $1,700 Final Cost: $6,255 1 Based on fees for the Fall 2011 semester. Summer 2012 fees may vary. 2 The program fee is based on applications received before December 9, 2011.

How do I sign up? Submit the following to Carole Braun in 308 Gwynn: A completed course proposal form-You will need to get approval to study abroad from your advisor and school’s dean’s office A completed application form A nonrefundable $100 deposit should be made out to University of Missouri to hold a place in the program. The deposit will be applied toward the student’s payment for the program fee. Return deposit and forms to 308 Gwynn by December 9, 2011
