North American Okra Chinese Okra

 One of the most important ingredients in gumbo is okra. There is a Chinese okra( 丝瓜 ), but it is not the same as the American kind– the American okra is a very small vegetable, while the Chinese okra is quite large (it is often mistook for a variety of cucumber( 黄 瓜 )). Because American okra is almost impossible to find in China, you can use Chinese okra.

 Heat the butter in a large casserole. The pumpkin is cooked in boiling water. It is then drained, mashed and allowed to cool. The flour is sifted into a bowl and baking powder and a pinch of salt are added to it. Butter is also rubbed into the flour. Water is added and it is all mixed to make a firm dough. The dough is chilled in the refrigerator for 30 minutes. The dough is rolled out and a pie dish is lined with it. Egg and sugar are beaten together in a bowl. Milk is stirred in. Mashed pumpkin is added with mixed spice, sugar and a pinch of salt. The mixture is spooned into the pie case. It is then baked for 40 to 50 minutes or until the topping is set. The pie is served cold with whipped cream.
