ANTIOXIDANTS Electrochemistry Layer A March 25, 2013 Mrs. Wilson Sadia Rahmani

WHAT IS AN ANTIOXIDANT? Anti – Against Oxidant – Oxidation

ANTIOXIDANTS Antioxidants are molecules in the body that work to prevent oxidation in the body.

. Oxidation: A process in which one or more electrons is lost by a chemical entity to an oxidizing agent in redox reactions.

FREE RADICALS Chain Reaction… Radical Healthy Cell

HOW ANTIOXIDANTS WORK 1.Stopping the Chain Reaction 1.Stopping the Chain Reaction - The chain reaction that was initiated, [as explained in the previous slide], is stopped by Antioxidants because antioxidants provide the free radical with an electron so that it does not steal electrons from others (AntioxidantBuzz, 2010). Prevention 2. Prevention - Antioxidant comes as enzymes such as superoxide dismutase, and catalase actually prevent oxidation. They prevent the chain reaction from happening by getting rid of free radicals in the first place (AntioxidantBuzz, 2010).

COMMON ANTIOXIDANTS Vitamin E Vitamin C Beta-carotene Selenium Antioxidant enzymes: Superoxide dismutase Catalase Glutathione peroxidase

FOODS WITH ANTIOXIDANTS

DAMAGING PROCESSES ANTIOXIDANTS PREVENT Oxidative Stress: occurs when there are more free radicals than antioxidants in the body.

PREVENTION Various forms of Cancer Heart Disease Several types of diseases Arthritis Immune dysfunction Other chronic conditions

“In one recent study, the addition of a polyphenol-rich blueberry gel to the diet of oral cancer patients prevented recurrence of the cancer. Another experiment demonstrated that increased levels of selenium in the diets of a group of HIV-positive patients significantly delayed progression of the disease” (Solmaz Barazesh, Penn State). Research: Antioxidants

BENEFITS TO HUMANS Gets rid of free radicals Benefits different parts of the body in different ways Can decrease evidence of aging

RISKS TO HUMAN HEALTH Over consumption of any antioxidants lead to side effects. Examples: Vitamin E: Vitamin E: Over consumption causes: nausea, headaches… gastrointestinal bleeding, blurred vision Calcium Calcium : Stomach problems and kidney stones.

THANK YOU Remember: Always have your Antioxidants but don’t have too much!
