Fisher, PhD 1 Organization: 1 Temple University: CORE, 2 The Food Trust Phone Number: Address: Situation : The USDA supports school breakfast program (SBP) participation, the state educational agency recognizes SBP as instructional time, school principals are graded on efforts to increase SBP participation, and SBP participation may protect against overweight and obesity. In urban areas marked by high rates of food insecurity and childhood obesity rates, the effect of increased SBP participation may be exponential when the school policy environment meets criterion already identified as protective against obesity. Yet, student SBP participation rate is low in a universal free SBP, many students skip breakfast altogether, and many students eat more than one breakfast a day. InputsActivitiesOutputsOutcomes We will invest in: A focused message with physical, policy, and socio-cultural environmental supports Stakeholders: Philadelphia School District Principals Food service staff Teachers Parents Students The Food Trust Temple University Corner stores Funds Time What we do: 1)Design and conduct research in phases 2)Develop, test, and refine program materials, messages, frames 3)Develop extension and outreach training modules for teachers, parents, and students Methods we use: Classroom feeding In-school student nutrition education/teacher training Youth leadership Parent outreach and education Social marketing Data we collect: BMI assessments Breakfast pattern surveys SBP participation rates School policy strategies for integrated breakfast education (SNAP-Ed) and classroom feeding Socio-culturally tested message and frames Teacher and student breakfast nutrition education materials Communication networks for parent outreach Learning settings for parent education # of participants engaged in learning and leadership activities # of youth engaged in leadership activities # hours nutrition education # educational contacts KNOWLEDGE Determine variables that affect student breakfast location and food choices Understand influence of parents on student's breakfast location and consumption Understand interpretations of newly evaluated message and frames Student, parent and teacher instrumental and practical knowledge gains ACTIONS Improve school practices to promote school breakfast participation Improve school breakfast experience CONDITIONS Among middle school students: 1)Increase participation in school breakfast program 2)Decrease consumption of more than one breakfast 3)Decrease breakfast skipping Lower incidence of overweight and obesity Better understanding of mechanism between breakfast consumption and weight outcomes ASSUMPTIONS 1)Stakeholder needs and opinions are crucial to the integrated project’s success and sustainability. 2)Increasing participation in school breakfast program will fulfill student needs as well as provide economic benefits to parents. 3)Many gaps exist in current knowledge of mechanism between breakfast consumption and child weight. EXTERNAL FACTORS 1)Cooperation from parents and school food service directors is crucial to the success of this project. 2)School Food Service practices can positively or negatively affect the added value of school breakfast. 3)Uncontrollable factors, such as access corner stores and the availability of energy dense, nutrient poor foods, can affect availability of variety and quality of breakfast offerings.
