Measuring Ingredients The key to being a good cook is good measuring. Without proper measuring, your recipe may fail. Here’s a few things to remember in order for you to have success in the kitchen.

Dry Ingredients Steps These ingredients include: Flour Sugar Cornmeal Powdered sugar Steps Select the dry measuring cup needed. Fill measuring cup and level with a straight edge spatula or the back of a knife. Do not tap, shake or pack in ingredients.

Sifting ingredients Steps These ingredients include: Flour Powdered sugar Steps Select the dry measuring cup needed. Place sifter over measuring cup (over wax paper) Spoon ingredients into sifter. Sift and level with a straight edge spatula or the back of a knife. Do not tap, shake or pack in ingredients.

Liquid Ingredients These ingredients include: Milk Juices Water Sauces Stand liquid measuring cup on a flat surface. Fill to desired line and check at eye level. Add or take away ingredients to exact amount.

Measuring spoons Can be used for liquid or dry ingredients such as: Vanilla extract Hot sauce Baking powder Spices or herbs -Dry Stir to remove lumps, dip in measuring spoon, then level. -Liquid Fill to the rim of the measuring spoon.

Moist Ingredients These ingredients are not liquid or dry but you still need to use the dry measuring cups. These ingredients include: Peanut butter Shortening Butter or margarine Brown sugar Steps Press into dry measuring cup to avoid air pockets. Level with metal spatula. Remove with rubber spatula (except for brown sugar)

Butter, Margarine and Stick shortening There is no need to use a measuring cup for these moist ingredients. These items are often sold in pre-measured sticks. Butter and Margarine are sold in ½ cup sticks. Shortening is sold in 1 cup sticks. Measurements are marked on the wrapper. Simply cut off the amount needed and store the rest in the refrigerator for later use.
