Crude and True protein  True protein : Nitrogen compound only as protein.  Crude protein : All nitrogen compounds including also Non Protein Nitrogen (NPN) in addition to protein.  NPN : free amino acids, amina, amonia, urea, biuret, nitrites, nitrates.
