Leonardo da Vinci Partnership: “Kitchen and Restaurant Guide for Starters”

Wheat  Wheat is often used for the production of flour which is used for baking. There are different kinds, for example, white flour, whole grain and cracked wheat.

Corn  Corn has various uses; it can be used to produce cooking oil, alcoholic spirits, starch, flour and meal. The meal is often referred to as polenta.

Rice Rice is a staple food for most of the world’s population. Rice comes in a number of varieties, based on the size of the grain as well as color and texture. Rice is boiled when used as food.

Oats  Oats are used for producing oatmeal which is mostly used for oatmeal porridge, in cakes and biscuits and in müsli.

Rye  Rye is used to make flour for rye breads and some alcoholic spirits.

Barley  Barley is used for soups and often is used in brewing beer in the form of malt.

Durum Durum is a type of protein-rich wheat used for producing pasta, noodles, couscous and also bread.

Potato Potatoes are sometimes also used as a cereal. Potato flour is used as a thickening agent.
