GLYCEMIC INDEX measure of the effects of carbohydrates in food on blood sugar levels indicate how fast and how high a particular food can raise our blood glucose (blood sugar) level. a food with a high GI may cause our blood glucose level to increase above the optimal level.

GLYCEMIC LOAD The glycemic index is about the quality of the carbohydrates, not the quantity Glycemic Load The glycemic load (GL) is a ranking system for carbohydrate content in food portions based on their glycemic index (GI) and a standardized portion size of 100g Glycemic Load = Glycemic Index x Carbohydrates / 100
