TEXAS MEAT INSPECTION

Objectives  Summarize the responsibilities of Department of Health Services Meat Inspection

Responsibilities  Meat and Poultry Inspection  Custom processing inspection  Inspect alternate food source (exotic meat)

Federal Versus State  All federal laws must be observed if meat crosses state lines  State inspection can be more stringent that federal law, or apply to meat that is sold only within the state

Meat and Poultry Inspection  Plants must apply and receive state certification  Plants do not pay inspection fees, unless it is overtime or on holidays

Custom Processing  Animals must pass antemortem inspection  Facility records must be kept for two years  Federal regulations regarding sanitation must be observed  Animals must receive humane treatment  Facilities must be well constructed  Product containers must be sanitary

Custom Processing Continued  “Texas Rejected” will be tagged to:  Any unsanitary items  Adulterated carcasses  Items not fit for consumption will be denatured  All items must be properly labels, including storage info  All additives must be FDA approved

Alternate Food Source Inspection  To be sold, game must be inspected  Mobile or Field dressing must be supervised by an inspector  Any contaminated meat must be cut away  Organs must be inspected
