Local Kids Eat Local Kale!

Although it is not a lettuce, kale grows in a similar way. Kale is fresh year round because it can handle cold temperatures, while many other crops cannot. You just need one small seed– the size of a tiny pin head - to grow an entire plant. Kale is a member of the brassica family which includes collard greens, brussels sprouts, cauliflower and broccoli. How does your kale grow? Photo credit: Farm with a View

Compared to one cup of iceberg lettuce kale has… 30 times the amount of Vitamin A. 40 times the amount of Vitamin C. 32 times the amount of Vitamin K It also has more calcium Be open-minded & healthy– try local kale at school this month! Kale is Super Green & Super Healthy Usually, veggies with more vibrant colors are richer in vitamins & minerals. Let’s do a one cup comparison to see why…

These are some of the local farmers who grow kale for you to eat. You can pick & eat kale all year long. It is so good for you! Kale grows very well here where we live. Clayton from Growing Washington Becky & Ray from Ralph’s Greenhouse Gretchen from Spring Frog Farm
