Research & Knowledge Management JOINT BEEF SAFETY COMMITTEE Mike Engler, Chair Duane Theuninck, Vice Chair

Research & Knowledge Management Strategies Addressed Beef Safety – Maintain and increase consumer confidence in beef safety.

Research & Knowledge Management Agenda Items Research and policy presentation Resolutions Research Update AR presentations Prioritization of AR’s

Research & Knowledge Management Research Reports and Resolutions Extensive discussion was held regarding recently completed and ongoing research Policy relating to beef safety addressing non-intact products, biotechnology, BSE and pathogens was discussed No resolutions were introduced

Research & Knowledge Management Authorization Requests One AR submitted by NCBA ($ 2,150,000) –TSE Science –Pathogen Management –Beef Industry Food Safety Council –Dissemination and Education Programs

Research & Knowledge Management Prioritization of AR’s NCBA AR- High Priority

Research & Knowledge Management Research Update Dr. Mohammad Koohmaraie Cow plant study –Variable pathogen prevalence on hides –Interventions are effective = 0 positives in hot box Feedlot Study –E. coli O157:H7 prevalence variable across pens –Some animals never shed the pathogen –All animals must be sampled to account for variation Transportation and Lairage –Hide prevalence higher at plant –70% of isolates of unknown origin Enumeration methodology –E. coli and Salmonella = $2 per sample E. coli survival on hides 9 days

Research & Knowledge Management Research Update Dr. Rod Moxley Vaccination effects on E. coli O157:H7 prevalence –2 doses- entry and re-implant –Harvested 85 days after 2 nd vaccination –Fecal samples= vaccinated cattle 62% less likely to shed vs. unvaccinated –Vaccinated cattle 54% less likely to have hide contamination
