How do you eat a gluten-free diet and what are the health consequences of eating a gluten free diet? Children’s Book BBQ4c – Hailey Hershey

His doctor said that Billy was allergic to gluten and had something called Celiac disease. The doctor said Billy can’t eat anything that contains wheat, barley, or rye. Billy wasn’t feeling well after he ate certain foods, like breads, fries, or chips. So Billy’s mom took him to the doctor.

This means Billy’s has to eat gluten free diet for the rest of his life. The doctor said to avoid all foods that contain gluten, or food that could have come in contact with wheat, barley or rye.

Bad things to eat are breads, French fries, pastas, certain salad dressings, cakes and pies potato or tortilla chips. The doctor gave Billy's mom a list of foods that he could eat. Billy can only eat packaged foods that say gluten-free! Avoid foods that aren’t labeled gluten-free.

These were some of Billy’s favorite foods!

Billy was sad because some of his favorite foods contained gluten. But Billy’s mom said not to worry because there are plenty of yummy gluten-free foods available!

Most foods are naturally gluten- free like, beans, nuts, fresh eggs, fresh meats without breading, batter coated, or marinating, fruits and vegetables, most dairy products. But be careful, Oats need to be avoided because they possibly were cross contaminated with wheat during the growing process. Many companies make gluten free things like brownie and pancake mixes. There are gluten free chips and breads. He could eat what he liked again!

After Billy stopped eating gluten he felt a lot better! His symptoms of bloating, stomach ache, diarrhea, and gas all went away! He had more energy because his body was properly digesting vitamins and minerals and even lost a little weight! For older adults, there are decreased risk of inflammation of the joints, rheumatoid arthritis and fibromyalgia
