Grain Based Amuse

Wild Mushroom Barley Risotto with a Pan Fried Chicken Cherry

Prepare the boned Chicken Cherry from the Chicken Winglet

Place the Barley on to boil in chicken stock

Sweat the Shallots

Add the Wild mushrooms and continue to sweat

Add the cooked Barley

Cook the Chicken Cherry

Add Mascarpone, butter and parmesan

Adjust consistency and seasoning and finish with chopped parsley

Serve with Chicken Cherry on top
