What is food safety? Food safety is a scientific discipline describing handling, preparation and storage of food in ways that prevent foodborne illness.

The five key principles of food hygiene, according to WHO Prevent contaminating food with pathogens Separate raw and cooked foods to prevent contaminating the cooked foods Cook foods for the appropriate length of time and at the appropriate temperature to kill pathogens Store food at the proper temperature Use safe water and raw materials

Food safety at the supermarket Expiry date Storage instructions- how to store food correctly to keep it in a good condition Shop the frozen and chilled products last Fresh products like meat and fish

Food safety in the kitchen Food should be stored correctly Good personal hygiene when preparing and cooking food Avoid cross- contamination Heating and reheating safely

Food safety when using the microwave Use glass and ceramic utensils labelled for microwave oven use Do not use plastic or aluminium Do not use foam trays

Summary Food can spoil due to the action of microbes Food needs to be stored properly and within its date mark Good personal hygiene is vital when cooking to avoid the risk of food poisoning Good food safety and hygiene is vital when cooking to avoid accidents and risk of food poisoning
