What is butterfat? The natural fat of milk and a major component of butter

What is marbling? The intramuscular fat that gives meat its flavor and tenderness

What is the process of dressing cattle? Removing the head, hide, hooves, and viscera from the carcass of an animal

How are pigs processed? They leave the skin on pigs. They also have the highest dressing percentage (72%) of all animals

What is a good practice for disease prevention in a dairy? The entire milking parlor must be thoroughly washed between milking cycles to help prevent disease

What is farrowing? The process of giving birth to a litter of pigs

How much sheep/wool production is Texas responsible for? 17 % of the total US products

What distinguishes a lamb under one year of age from an older lamb? Lambs under a year have a milder flavor of meat, and a break joint as compared to a ossified spool joint in lambs over a year of age.
