PURPOSE Research suggests that a low-fat, high-fiber diet packed with fruits,vegetables, grains and beans can reduce the risk of cancer (ACS, 1999). FACT; ½ of all adults eat 2 fruits/day and 3 veg./day (1999) Can telephone counseling services provide assistance to individuals who want to adopt cancer prevention dietary guidelines.

ELIGIBILITY CRITERIA Eating less than 5 serving of fruits and vegetables. Called ACS 1-800# or if part of ACS Programs. At least 18 years of age. English speaking. Not in treatment, or awaiting treatment for cancer. Not on a prescribed diet that would limit fruit or vegetable intake.

Healthy Eating Program Potential participants completes: –10 minute phone survey of fruit and vegetable intake during the past month. –Dietary recalls are scheduled at the beginning and end of the 8 counseling calls. –Participants are randomly assigned. –Receive up to eight nutritional counseling calls. –Time Commitment: 6 months total.

Nutritional Counselors Assist participants in identifying where and how to eat more fruits, vegetables, beans and whole grains. Incorporates principles of behavior change during counseling. Follow through with participant questions. Recruit participants into the study. –14 ACS volunteers

Healthy Eating Program BENEFITS: Personalized nutritional guidance. Receive feedback on your diet. Receive educational materials. All without charge. Contribute to our understanding of dietary behavior change.

Healthy Eating Program STATS. Approximately 1300 people were screened. ~200 have completed the program between UCSD & ACS. ~50 were participants through ACS.
