THE 3 POINTS OF KITCHEN SANITATION

“Germs” (Microorganisms) We get sick from harmful microorganisms. We get sick from harmful microorganisms. Microorganisms are all around us. Microorganisms are all around us. To stay healthy we must control the growth of microorganisms To stay healthy we must control the growth of microorganisms

Microorganisms need three things to multiply or grow: 1. warmth 2. food source 3. water

To control microorganisms in the foods we eat you must be attentive to the following areas.

Point 1: Personal Hygiene Use good personal hygiene.

Point # 2: Store and Handle Food Correctly  Store and cook food at proper temperatures to avoid the growth of microorganisms.  Avoid having food in the “Danger Zone” (40-140degrees) (40-140degrees)  Keep hot foods HOT and cold foods COLD!  Put groceries away immediately

Point # 3: Facilities & Equipment  Keep all your equipment clean.  Keep your kitchen clean.

Remember…. Poor sanitation leads to the spread and ingestion of harmful microorganisms which can make us ill or even kill.
