BY JODI DROLETTE HOW TO MAKE STUFFED BELL PEPPERS
INGREDIENTS 1 pound lean ground meat 1 ½ cups frozen corn 2 ribs celery 1 medium onion 2 cloves garlic, minced ounce can diced tomatoes 2 tablespoons concentrated tomato paste 2 tablespoons basil 1 tablespoon oregano ½ teaspoon red pepper flakes Salt and pepper to taste 1 ½ cups cooked brown rice 6 bell peppers 1 cup shredded mozzarella cheese
INSTRUCTIONS 1.Preheat oven to 350˚F 2.Brown turkey in large frying pan over medium heat until cooked almost through, about 5 minutes 3.Add corn, celery, onion, and garlic and cook until vegetables are softened 4.Stir in diced tomatoes, tomato paste, basil, oregano, and red pepper flakes 5.Season with salt and pepper to taste, and cook minutes
INSTRUCTIONS, CONT. 6.Stir in cooked rice and cook for another 5 minutes, until warmed through 7.While stuffing is cooking, cut tops off peppers and spoon out the seeds and ribs, rinse. 8.Sprinkle inside of peppers with salt and place in a microwave safe dish with ¼ cup water 9.Cover with plastic wrap and microwave for 5 minutes, until peppers start to soften
INSTRUCTIONS, CONT. 10. Transfer peppers to 3 quart baking dish 11. Stuff peppers with meat and rice mixture 12. Sprinkle tops with cheese and bake for 20 minutes, until peppers are tender and cheese is browned. 13. Serve hot and enjoy!
