There are lots of different varieties of potato. Can you explain how these potatoes look different from each other?

Some potatoes are waxy and some are floury. Waxy potatoes are usually a young type of potato. They are young because they have been harvested earlier than other types. Floury potatoes are usually an older type of potato. They contain less moisture.

Waxy potatoes are firm and hold their shape when they are cooked. Charlotte Charlotte potatoes are waxy. They are good for making potato salads.

Floury potatoes are softer and break up more easily when they are cooked. Rooster potatoes are floury. They are good for making mashed potato. Rooster
