Building new layers on basemaps that aren’t pre-made from Esri  Original layers may be created by uploading spreadsheets which contain coordinates or addresses of locations. This was covered in our summer workshop.  Comma-separated values (Save Excel file as CSV file)  A zipped shape file may be uploaded into the content area of ArcGIS Online. This was not covered in our summer workshop.  Add own data using Map Notes. This was covered in summer workshop.  Add gpx files from GPS data collection. This was not covered in summer workshop.  ArcGIS Desktop (professional version) allows for additional options for creating original layers which may also be imported into ArcGIS Online.

How to take data from GPS coordinates and overlay on a map CSV, TXT, and GPX files  You can add features to your map that are stored in a delimited text file (.txt or.csv) or a GPS Exchange Format file (.gpx). Below is more information on this topic:
