Old Fashion Buttermilk Biscuits What You'll Need: 4 cups self-rising flour, plus more for rolling out 1 tablespoon baking powder 1 tablespoon sugar 3/4 cup vegetable shortening 2 cups buttermilk What To Do: Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray. In a large bowl, combine flour, baking powder, and sugar; mix well. Using a fork or pastry cutter, cut shortening into flour mixture until crumbly. Add buttermilk and stir just until a soft dough forms. Lightly flour a flat surface; using a rolling pin, roll out dough to 1/2-inch thickness. Using a 2-inch biscuit or cookie cutter, cut into round biscuits and place on prepared baking sheet. Bake 12 to 14 minutes, or until light golden. Serve warm, or remove to a wire rack to cool completely. Note Serve these with a little butter for the perfect addition to breakfast...or any meal, for that matter!
Slow Cooker Sweet and Sour Meatballs What You'll Need: 1 plastic slow cooker liner 1 (9- to 10-ounce) jar sweet and sour sauce 1/4 cup light brown sugar 3 tablespoons soy sauce 1/2 teaspoon garlic powder 1/2 teaspoon black pepper 2 1/2 pounds frozen meatballs 1 red bell pepper, chopped 1 (20-ounce) can pineapple chunks, drained What To Do: Place liner in a slow cooker bowl, fitting it snugly against bottom and sides of bowl; pull top of liner over bowl rim. Place all ingredients in slow cooker; stir gently then cover with lid. Cook on low setting for 7 to 8 hours, or on high setting for 4 to 5 hours, until done. Carefully remove lid to allow steam to escape. Serve directly from slow cooker (see Note). Note To avoid injury, do not lift or transport the liner with food in it, and allow the slow cooker to cool completely before removing and discarding the liner.
Bacon 'n' Cheese Bites What You'll Need: 1 cup biscuit baking mix 1/2 cup processed cheese spread 1/2 cup (2 ounces) finely shredded Cheddar cheese 2 tablespoons real bacon bits 1/3 cup club soda What To Do: Preheat oven to 450 degrees F. Coat two rimmed baking sheets with cooking spray. In a medium bowl, beat all ingredients except club soda until well mixed. Add club soda and beat until well combined. Let stand 5 minutes. Drop by teaspoonfuls 2 inches apart onto baking sheets. Bake 7 to 10 minutes, or until golden. Serve immediately. Notes Replace the club soda with beer. It'll give these even richer flavor.
My Aunt's Blueberry Muffins What You'll Need: 1 1/4 cups plus 2 tablespoons sugar, divided 1/2 cup (1 stick) butter, softened 2 eggs 2 cups plus 1 tablespoon all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup milk 1 teaspoon vanilla extract 1 pint fresh or 1 (12-ounce) package frozen blueberries What To Do: Preheat oven to 375 degrees F. Line a 6-cup muffin tin with paper baking cups and coat with cooking spray. In a large bowl with an electric mixer on medium speed, beat 1-1/4 cups sugar and the butter until creamy. Add eggs one at a time, beating well after each addition. Add 2 cups flour, baking powder, and salt; beat well. Add milk and vanilla, and beat until thoroughly combined. Mash 1/2 cup of the blueberries and stir into batter. In a medium bowl, toss the remaining blueberries with the remaining flour. Fold into batter and spoon into baking cups, distributing batter evenly. Sprinkle tops with remaining sugar. Bake 25 to 30 minutes, or until a toothpick inserted in center comes out clean image: Remove to a wire rack to cool completely. Notes This will make 6 jumbo muffins or 12 cupcake-size muffins.
Whole Wheat Buttermilk Pancakes What You'll Need: 1 cup all-purpose flour 1 cup whole wheat flour 3 tablespoons sugar 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2 cups low-fat buttermilk 1 tablespoon vegetable oil 2 large eggs Assorted fresh fruit for topping What To Do: In a large bowl, combine dry ingredients. In a medium bowl, whisk buttermilk, oil, and eggs; add to dry ingredients, stirring just until moist. Coat a nonstick griddle or skillet with cooking spray; heat over medium heat. Pour 1/4 cup batter onto hot griddle and cook 2 to 3 minutes or until bubbles form on top. Turn pancakes over and cook an additional 2 to 3 minutes, or until golden brown. Continue in batches. Add remaining ingredients except shortening; mix well. In a griddle pan or large skillet over medium heat, heat shortening. Pour 1/4 cup batter onto hot griddle and cook 2 to 3 minutes, or until bubbles begin to form, then turn pancakes over and cook an additional 2 to 3 minutes, or until golden brown. Satisfying Shepherd's Pie What You'll Need: 1 1/2 pounds ground beef 1 onion, chopped 1 (1.15-ounce) envelope onion soup mix 1 (18-ounce) jar beef gravy 1 teaspoon garlic powder 1/2 teaspoon black pepper 1 (16-ounce) package frozen mixed vegetables, thawed 4 cups prepared mashed potatoes Paprika for sprinkling What To Do: Preheat oven to 350 degrees F. Coat a 2-quart casserole dish with cooking spray. In a large skillet, brown ground beef and onion. Drain excess liquid, if necessary. Add soup mix, gravy, garlic powder, and black pepper; mix well. Stir in vegetables. Place mixture in casserole dish. Spread mashed potatoes over top and sprinkle with paprika. Bake 30 to 35 minutes, or until heated through. Notes Did you know that in England this wouldn't be considered Shepherd's Pie? The British call it Cottage Pie, since authentic Shepherd's Pie is actually made with chunks of lamb. It'll be fun to share this bit of trivia when serving up this casserole.
Unforgettable Chicken Casserole What You'll Need: 3 cups chopped cooked chicken 2 cups finely chopped celery 1 cup (4 ounces) shredded Cheddar cheese 1 cup sour cream 1 cup mayonnaise 1 (4-ounce) can water chestnuts, drained and chopped 1 (10-3/4-ounce) can cream of chicken soup 1/2 cup slivered almonds 1 (6-ounce) can French-fried onion rings What To Do: Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. In a large bowl, stir together chicken, celery, cheese, sour cream, mayonnaise, water chestnuts, soup, and almonds. Spoon into prepared baking dish. Bake, uncovered, for 30 minutes. Sprinkle onion rings evenly over top and bake 5 more minutes, or until bubbly around edges. Let stand 5 to 10 minutes before serving. Baked Goulash What You'll Need: 1-1/2 to 2 pounds ground beef 1/2 pound sliced mushrooms 1 small onion, chopped 1 tablespoon chopped garlic 1 (28-ounce) jar spaghetti sauce 1 teaspoon salt 1/2 teaspoon black pepper 8 ounces uncooked elbow macaroni 1/2 cup water 1 cup (4 ounces) shredded mozzarella cheese What To Do: Preheat oven to 350 degrees F. Coat a 2-1/2-quart casserole dish with cooking spray. In a large skillet, brown ground beef, mushrooms, onion, and chopped garlic over medium-high heat 6 to 8 minutes, or until no pink remains in the beef, stirring frequently. Drain off excess liquid then add remaining ingredients except cheese; mix well. Place mixture in prepared casserole dish, cover, and bake 25 minutes. Remove from oven and top with mozzarella cheese. Return to oven and bake, uncovered, 15 to 20 minutes, or until heated through and cheese has melted. Note This is a perfect dish to make ahead and freeze. You can even freeze it in individual portions so that way the kids can microwave a dish after school or anytime they need a quick meal.
Baked Tuscan Spaghetti Casserole What You'll Need: 1 pound ground beef 1 teaspoon salt, divided 1 (26-ounce) jar spaghetti sauce 12 ounces spaghetti 1 (15-ounce) container ricotta cheese 1 cup sour cream 1 1/2 teaspoons Italian seasoning 1 teaspoon garlic powder 1/4 cup grated Parmesan cheese What To Do: Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish or 3-quart casserole with cooking spray. In a large skillet over medium heat, brown ground beef with 1/2 teaspoon salt until no pink remains; drain off excess liquid. Stir in spaghetti sauce; set aside. Prepare spaghetti according to package directions; drain and place in a large bowl. Add ricotta cheese, sour cream, Italian seasoning, garlic powder, and remaining salt. Stir until cheese is melted and spaghetti is evenly coated. Spread a cup of meat sauce in the bottom of prepared baking dish. Place spaghetti on top of sauce and top with remaining meat sauce. Sprinkle Parmesan cheese on top. Cover with aluminum foil. Bake 45 minutes. Remove foil and bake 5 to 10 additional minutes, or until heated through.
