Strictness and transparency - Voluntary and collective project by commitment of a group of professionals (producers, processers,packagers,…) - A precise specification drawn up by professionals within a public frame - Control procedures of specification’s fulfilment = guarantee on the product’s specificities (justifying a higher price) - An efficient system of protection 6
