Foods & Nutrition Sanitation & Clean Up Procedures AKA = Dishwashing 101

Step 1: Set Up 3 Step Dishwashing Procedure 1.Set up sink of hot soapy water on disposal side for washing dishes. 2.Set up garbage bowl by washing sink. Use garbage bowl to scrape out dirty ware. 3.Set up sink of hot sanitizing water in other sink for rinsing. Use Kleen Pail to add 2 pumps Quat Sanitizer. (Need 200 PPM concentration to kill germs on dishes) 4.Set up bus tray and dish drain beside sanitizing sink.

Step 2 = Sanitize Add 1 pump Quat Sanitizer to Kleen Pail. Fill ¾ full with warm water. Using clean cloth, dip cloth in Kleen Pail solution, wring out well. Thoroughly wipe down all counter top, sink, faucet, range top, microwave and table top surfaces. Return cloth to Kleen Pail to use to sanitize as needed and after clean-up. This solution can to sanitize thermometers, knives and countertops throughout lab.

Step 3: Ware Washing / Storing Scrape / Wipe out ware into garbage bowl. Wash all surfaces of ware brush or green scrubber until clean. Dip in sanitizing sink. Allow to soak 15 seconds. Drain to dry if at all possible. If you must towel-dry, take special care to only use clean towels. Never use towels used to wipe counter tops, hands or that have touched food.

Clean Up Procedures Change and make new washing and sanitizing water as needed. All ware used by you in the kitchen must be thoroughly washed, sanitized, dried and returned to it’s location in the kitchen. Knives: Wash while holding them. Do not put in sink of soapy water. It is best to use the brush and thoroughly wash all surfaces of blade and handle.

Step 4: Clean and Re-Sanitize With cloth from soapy washing water, thoroughly wipe down all counter top, sink, faucet, range top, microwave and table top surfaces. Drain sinks and wipe out with Kleen Pail cloth. Drain dish tub and wipe out with Kleen Pail cloth. With cloth from Kleen Pail, thoroughly wipe down all counter top, sink, faucet, range top, microwave and table top surfaces. Drain and wipe out Kleen Pail.
