Carlos Pinera EEC January 2012 U.C.F. Food Allergies and the Safety of Our Children

Food Allergies : Less than 2% of all children have an inherited immune disorder resulting in true allergic food reaction. Unpleasant reactions to certain food are experienced more frequently by children. Food intolerance or food insensitivity affects nearly 8% of infants and small children ages four and under. Symptoms of food intolerance are not likely to be life-threatening. Eventually outgrown by the young child.

Allergic reaction symptoms can take place instantly or up to several hours after food digestion. The most common symptoms are: Hives, skin rashes Flushed or pale skin Cramps, vomiting, and/or diarrhea Runny nose, watery eyes, congestion, and or wheezing Itching or swelling around the lips, tongue or mouth Anxiousness, restlessness Shock Difficulty breathing Death
