Encouraging Diabetic Menus Christine Martin, Shania Wright, Irma Morales

Identifying the Problem Diabetics have to keep a strict diet in order to keep their blood glucose levels in check. This creates problems while eating at restaurants because it is hard to tell which food options are best for a diabetic lifestyle. Additionally, because of the overwhelming amounts of choices it can become easy to stray from good food choices.

Proposal Our idea is to help restaurants and other food venders promote healthier food choices for a diabetic lifestyle. Our goal is to make life easier for diabetics by giving them an easy way to eat more nutritiously and improve their health.

Improving the Life of a Diabetic These new diabetic-friendly menus would improve the lives of diabetics because while dining out, they would know exactly which foods to eat and not be tempted to eat the wrong foods. This would hopefully increase a diabetic’s willingness to go out with friends because they would not feel restricted by their diagnosis.

About the Menu These new menus will include diabetic- friendly foods such as fruits, vegetables, whole grains, low-sugar options, dairy products, meats with the fat cut off, seafood, low-fat options, and will be offered in small portions. They would also include calorie count and serving size

Example Menu Breakfast (360 calories, 52.5 grams carbohydrate) 1 slice toasted whole wheat bread with 1 teaspoon margarine 1/4 cup egg substitute or cottage cheese 1/2 cup oatmeal 1/2 cup skim milk 1/2 small banana Lunch (535 calories, 75 grams carbohydrate) 1 cup vegetable soup with 4-6 crackers 1 turkey sandwich (2 slices whole wheat bread, 1 ounce turkey and 1 ounce low- fat cheese, 1 teaspoon mayonnaise) 1 small apple Dinner (635 calories, 65 grams carbohydrate) 4 ounces broiled chicken breast with basil and oregano sprinkled on top 2/3 cup cooked brown rice 1/2 cup cooked carrots 1 small whole grain dinner roll with 1 teaspoon margarine Tossed salad with 2 tablespoons low-fat salad dressing 4 unsweetened canned apricot halves or 1 small slice of angel food cake

These new menus will improve the lives of diabetics everywhere! Diabetic friendly!
