Root Vegetables
What on earth is a root vegetable? We call the parts of plants we eat that grow underground root vegetables. Carrots, turnips, radishes, potatoes and sweet potatoes, garlic and onions are all vegetables you might know – and we call them all root vegetables. REALLY, there are some differences. Some root vegetables are the actual root of the plant, like carrots and radishes; some are a part of a plant called a tuber, like potatoes; and some are bulbs, like garlic and onions.
Growing Season This illustration is by Lizzy Rockwell, who wrote Plants Feed Me. It is a great book for learning about the parts of plants that we eat. Root vegetables grow underground. Because they don’t rely on the weather above ground, a lot of root vegetables grow very well during the winter.
