Food Intolerance Jonathan Palozzi and Jason Galli

What is food intolerance?  A reaction to a food we eat  Brought about by us not being able to break down a certain type of food

Allergy or Intolerance?  An allergy is a reaction to a certain type of food by the immune system.  The symptoms of allergies tend to be more severe.  The symptoms of food Intolerance are usually less severe.  The person usually feels ill.

Diagnostic Tests Symptoms  Bloating  Cramps  Diarrhea  Flatulence  Nausea Symptoms usually show up anywhere from 30 minutes to 2 hours after ingestion of intolerant substances

Blood Tests Elimination Diets Breath Tests Endoscopy

Mechanisms behind Food Intolerances Improperly digested sugars and proteins can damage key organs such as small or large intestines Pancreas does not produce enough enzymes to digest certain substances Scientists are still unsure what causes enzyme deficiency, but GENETICS may have something to do with it

Lactose Intolerance  The inability to digest lactose  Occurs when the body is lacking in the enzyme, “Lactase”  It is not dangerous

Treatment  Remove dairy from the diet  Use lactose free dairy products  Add Lactase enzymes to regular milk  Take calcium supplements

Caffeine Intolerance  Much like lactose intolerance, the body lacks the appropriate enzyme to digest caffeine.  The effects are felt almost immediately Treatment? Remove caffeine from your diet!

Celiac Disease  Causes a reaction when gluten is ingested, damaging the villi in the small intestine  Is a cause of Lactose intolerance  Causes nutrients to not be absorbed properly  Can cause someone to become malnourished Treatment? Remove gluten from diet!

Other common food intolerances Pork Oranges Banana Chocolate

Treatments for Intolerance 1. Cut the intolerant food out of your diet 2. Take supplements that contain the deficient enzyme
